About this Unit
The goal of this unit is to integrate studies in food quality and safety with such previous units as microbiology, food practicums, food science and technology and management; elementary toxicology; principles of food safety, terminology, the acceptability of risk, the risk/benefit principle; food laws, regulations and codes: Food Standards Code, Australian Quarantine Inspection Service, Joint Expert Committees of the FAO and the Codex Alimentarius Commission; principles of quality planning and statistical process control; ISO 9000 quality standards; and quality manuals.
