About this Unit
In this unit students learn to carry out, in a competent manner, laboratory analysis of foods using modern analytical methods and equipment, and relating the results to overall food manufacturing requirements. Topics include: control of food quality, food composition data, fibre in food, enzymic analysis, proximate analysis, methods of nutritional evaluation, computer modelling of protein efficiency ratio determination, laboratory practice workshop (NATA), and quality assurance.
