This unit is designed to enable students to: understand chemical and physical changes in food and principles of preservation; apply enzyme technology; conduct sensory evaluation; understand and apply quality management (HACCP), apply food legislation, understand and control food spoilage and safety to food processing and manufacture in the Pilot Plant; determine of sterility for canned products; understand cereal science and technology.
