About this Unit
From 2009 this unit is being replaced by 300636 - Food Processing and Analysis. The nutritive, biochemical, microbiological, quality assurance and functional properties of food will be discussed using liquid milk, dairy products, muscle foods (red meat, poultry and fish) as examples. Basic concepts of sensory evaluation and basic human nutrition will be discussed. The concepts learned in this unit will be applied in Food Technology Practicum 2.2.
