About this Unit
The nutritive, biochemical, microbiological, quality assurance and functional properties of food would be integrated into the overall concept of food commodity manufacture and application of this concept to a range of foods to provide proficiency in handling and manipulating basic building blocks of food processes and process controls as they are experienced with each new food group. Small scale product manufacture, including red meat, liquid milk and dairy products and sensory evaluation exercises. Students will be expected to work in groups.
