About this Unit
This unit aims to extend the students' knowledge of food preparation and advanced food skills. Content areas covered include egg emulsions, pastry, sugar crystallisation, preservation, chemical and biological raising agents, flour mixtures and gelatine gels. The unit integrates areas of food preparation and presentation with cultural influences on Australian cuisine and formal menu planning.
