About this Unit
Students will gain knowledge and understanding of food quality (including HACCP), changes that occur in foods, spoilage and preservation and post harvest changes that occur in fruit and vegetables. Other topics covered are unit operations that are required for the processing of foods, dietary guidelines and sensory evaluation methodology. Processing of selected products will be carried out in the Pilot Plant.
